Moose is similar to beef but with less fat, we mix pork with moose to make our moose burgers with or they are too dry.

Fish, you would LOVE elk meat, well meat from a good cow or young Bull, some of those big Bulls can really be rank and tough especially during the bow season which is the beginning of the rut here.

I can get all the moose I want, just can't send it down south, Maine moose are the same...

There are  new laws down here dealing with transportation of game meat  across state lines , CWD ( cronic  waste disease )  started that , the meat has to be deboned and if mounting the animal , the cape has to be de-skulled and all brain matter removed to cross state lines

Down here the eyes are called the Wildlife and Fisheries Internet Task Force , you wouldn't believe how many people  get busted putting pics on the net of animals shot  illegally  ----- and then the got the ears , Operation Game Theft Hot Line 1-800-Rewards where  you can rat someone out , every weekend the Fish and Game Show has the Bad Boys segment of the worst outlaw of the week , that's always good ---  lol

The one I shot may not have been to smart. spotted him at about 600 yards, stopped the truck in a depression in the wheat stubble he headed right for us. when he was about 250 yards out shot him head on in the chest, dropped like a rock. It was very warm that day, field dressed him took him in to the check station then skinned boned and had him on ice in about 2 hours, didn't weigh the meat but guessing not more than 30-35 lbs. was very good eating.

If I remember right, when my oldest brother used to hunt them he'd get a couple and get about 75 lbs. of meat out out of the 2. My wife swears by it says its delicious.

thank you! sure beats paying $9 a lbs for chopped sirloin. and was that last time i went to shopping.... thankfully i was well stocked long before covid .. so I'm thinking more and more about wild game ... i never took up hunting ... but here on my place ... i could step out early in the am and kill a doe for meat ... no telling how many wild turkeys i have running around ... i have three in my yard every morning always right around the wood furness.

never et no moose or antelope, i like deer meat, an had buffalo, bought locally. i like my deer young or does, or both. though that 6 pointer was mighty tasty. called them in on a PRIMOS Lil can. only used it twice, an the deer came in. 27 mins. the 1st year, 17 mins the next. 7 the third year. i didnt have time to smoke, the 3rd year. ask me in about this 5 yrs., an the story wont change. all three times, i was using my 50 cal. muzzle-loader. last time i got a deer was before my stroke in 2010. i still got deer meat in the freezer that i wouldnt be afraid to eat from 2007. thats just me, and the defrost dont work, as to ruin the meat.

i also used plenty of freezer paper, an plastic bag's to wrap the meat, so air cant get in, or a defrost cycle interference.

The enzymes in the meat will still break it down no matter how well sealed. You couldn't pay me to eat meat that old.

you  talking wild game or all meats ? just asking for reference ... i never keep meat frozen for an extended time ...  you recall ff defrosting his freezer a while back, i had done mine this season to noticed a couple lbs of ground beef .... i have no idea how long it was in there because i lable and date mine also i layer wrap each package ... i also layer the meat by date .... so the oldest gets used 1st .... what's the max time you think the meat would be fit to eat ?? ... the only thing I'm come across is freezer burn... and that was years ago.... i haven't had that issue here. i was thinking vacum sealing would be the way to go for extended freezer time ?? 

 

we don't those flavor chips here ether.

i hear of people, that will eat meat, frozen from a glacier, maybe thousands of years ago, or millions. can't say it is so.

as far as the enzymes in the meat, i dont know enough. this freezer dont defrost much, if any. deer meat from 2007 will bleed

red. guess i got to study the enzymes, cause i admit, i dont understand. maybe the meat still taste the same, regardless of the broken enzymes..

I don't think I would eat no thousand year old glacier frozen mammoth meat , but I have read that there was honey and vinegar in King Tuts' tomb that was still good , LOL

I would appreciate that TB , but I don't think I would be that into the ketchup flavored  LOL , I do eat the Doritos in different flavors

I been liking Cheese Puffs lately and heard a joke :

Venison will break down faster than beef. Different kinds of meats have different rates. Vacuum sealing helps the most. If the meat is bloody when you thaw it that's because it wasn't frozen fast enough. If you put in a pile of meat to freeze it should be spread out so each package freezes faster. Otherwise you actually get small ice crystals in the meat that cut it and let the juice flow out. As a side note I always butcher my deer within one or two days and it tastes FAR better than game that has been hanging. Ages far faster than beef etc.
